The curing of tea leaves is done by gram positive aerobic bacterium Mycrococcus candidans, Bacillus megaterium. Related Theory Curing is a process done to add special flavour and taste in tea leaves and remove its bitterness. It is also done for tobacco. In this process after harvesting the cured leaves are hung in shade and are permitted for the action of bacteria. It is essentially an oxidation dry fermentation process, during which, water is driven off, the green colour is lost and the leaves assume a tougher texture and undergo chemical changes.
